There is an official answer to this question, involving multiple altered versions of the timeline, in the Back to the Future FAQ by BTTF writer Bob Gale and writer/director Robert Zemeckis.

The moment Emmett went back to 1885 he started to change history but Marty wasn't schooled in that new history, so he never learned it. When Marty comments that the ravine was called Clayton Ravine, named after a teacher who died in it, he is remembering history from the very first, original time line, from the start of Back to the Future 1. The ravine is now called Eastwood Ravine and Clara and Emmett live happily ever after.

Go to the end of the movie and Eastwood/Marty falls into the ravine and creates (you guessed it) another new time line. However, this time Marty and Emmett save Clara at the brink, once again altering history and creating a new, new, new, new, new. No one picks her up, she tries to drive herself home and is on course to die. Clara is on the same path as the original, original time line. Jump forward (backward) a little more to when Emmett and Marty are scouting the tracks. While we never see a map of the ravine in this new time line, I would venture to say that it was not named the Clayton Ravine. In this timeline Emmett is asked to pick up Clara from the train station (just like when Marty is there), he does and he and Clara fall in love shortly before Emmett dies. Doctor Brown has gone back in time and created a new time line, which Marty is now in (counters Bttf2 a little). Jump forward to the end of Back to the Future 2. In the original time line established at the beginning of the first Back to the Future movie, Doctor Brown never traveled back in time, Clara died, the ravine was named after her and all the kids want their teachers to fall into it. The entire trilogy is still a must-see for parents who want to share a little bit of their own youth with the next generation, even if the children won't laugh quite as hard as you do at some parts. This actually ties back to the multiple time lines theory of Back to the Future (explained in the second movie), and in this case it gets a little more spaghetti'd. Fox's signature dance move, but it's funny even two decades later. One of the funniest moments is the saloon scene where Marty does the moonwalk when he's being shot at it may take some explaining if your kids don't understand the significance of Michael J. A heavily accented Thompson returns as Marty's relative, and Fox does double duty again as his own great-great-great grandfather, but the McFly kin has less to do in this one than in the first two the final film really belongs to Lloyd. Humor-wise, there are plenty of in-jokes for those who've seen the first two films, like Marty's touchiness at being called "yellow." As Marty's rival, Wilson gets to unleash a whole new set of insults as he bullies everyone around him. So for the romantics at home, this installment is for you. Doc was such a hermit outside of his connection with Marty, that it was a relief to see he could still have a chance at love - especially with someone as patient and intelligent as Clara. The introduction of a love interest for Lloyd may not seem interesting to kid viewers, but as an adult viewing it through grown-up eyes, that subplot with Steenburgen is so much more appreciated. After the mildly disappointing Part II, it would seem that a Wild West-themed threequel would flounder under the weight of too much time-travel confusion and overall Marty and Doc fatigue. Somehow Robert Zemeckis, Fox, and Lloyd make the back-in-time gimmick work, and it's a pleasant surprise.
